Hot off the ENC Lab presses. The space where we experiment, sharpen our creative edge, and create brands purely for the love of the craft, we are proud to introduce: Handsy! The starting point was simple: sushi culture has become strangely overcomplicated. Long waits, over-designed menus, delicate plating, and enough soy sauce to drown the fish. Somewhere along the way, the experience started to feel more like theater than food. But when you strip sushi back to its most essential form, a warm hand roll, fresh fish, crisp nori, perfectly seasoned rice, you realize it’s already perfect. So we asked ourselves: what would sushi look like if it loosened up a little? Handsy was our answer. A modern hand roll bar that doesn’t play by the rules. Think sushi that is flavor-forward and designed to feel equal parts cool and unbothered. Just sushi stripped down to the essentials and executed obscenely well. Fresh fish. Warm rice. Crisp nori. And a little personality. As with any ENC project, the concept couldn’t stop at the food. The brand itself needed to carry the same attitude as the experience. So we built Handsy to speak the same language as the product: quick bites, bold flavor, and a little irreverence. The tone is playful and a bit cheeky: “Get a little Handsy,” “We roll different,” “Come with your hands clean.” Copy that moves as fast as the rolls themselves. Visually, the brand leaned into a rich, tactile palette inspired by the ingredients themselves leaning into inky purples, salmon orange, ocean blues, and clean rice whites. The textures pull directly from the world of sushi: fish skin patterns, glossy lacquer surfaces, grains of rice, and the movement of water. Even the brand mark carries the attitude. The logo stretches vertically, almost like a roll in motion, while the supporting visual language introduces playful illustrations like a fish wrapped in a painterly blue hand that nods to the idea that this place is meant to be eaten with your hands, not admired from across the table. The menu design followed the same philosophy: tight, confident, and flavor-first. Each roll reads like a personality: The Big Dill Toro, Tan Lines, High Tides, Truffle Shuffle, Dirty Hands. Each roll feel just a little mischievous, paired with ingredients that deliver serious flavor. In the end, Handsy became a perfect ENC Labs project because it captures something we believe deeply: great brands don’t try to be everything. They focus on one thing and execute it obsessively well. For Handsy, that thing is the hand roll. Raw. Rolled. Ready when you are. A brand born from craving, rolled by those who know good food when they taste it, and built for people who like their sushi the same way we do—simple, bold, and a little bit Handsy.
